Ready in just 20 minutes, this is a delicious and simple, flavour packed dish. Pan-frying the gnocchi gives it a really nice crispy texture and browning the butter adds a deeper, nuttier flavour. Finished with the fragrant flavours of sage, garlic and parmesan - the lemon adds a touch of zing to bring the dish alive. A personal favourite on repeat in my kitchen for midweek meals.
Time to make : 20 minutes
Servings : 2
Ingredients
250g fresh gnocchi
1 tbsp olive oil
40g butter
10 fresh sage leaves
1 garlic clove, minced
1/2 lemon, zest and juice of
20g Parmesan cheese
Salt and pepper, to season
Method
Bring a large saucepan of water to boil. Add in your fresh gnocchi, it will float to the top once it's ready (~ 3 minutes), then drain and set to one side.
In a frying pan over a high heat, add your olive oil. Once it's warm, add in your boiled gnocchi and a good pinch of salt. Pan-fry for 4 - 5 minutes until it's golden on the outside. Tip the pan-fried gnocchi onto a plate and set to one side whilst you make the brown butter base.
Using the same frying pan over a medium - high heat, add the butter. Once it's melted, continue to cook the butter in the pan until it starts to go foamy and darkens in colour, being careful not to overcook and burn it. This should take about 3 minutes.
Once your butter has browned, add in the sage and pan-fry for about 1 minute until the leaves start to crisp up. Add in the garlic and fry for another minute. Tip in the pan-fried gnocchi and mix in with the butter, sage and garlic. Remove from the heat.
Add in the lemon juice and grate over the zest and Parmesan cheese, season with a pinch of salt and black pepper.
