Hot honey bowls

Hot honey drizzled over a bowl of taco seasoned mince beef, paprika roasted sweet potatoes, creamy cottage cheese and fresh avocado. Ready in less than 20 minutes with over 40g of protein, this is my go-to for busy weeks when I'm looking for simple, whole food nutrients and is great to food prep. for throughout the week.

Ingredients
250g lean beef mince
2 tbsp taco seasoning
2 sweet potatoes, cubed
1 tbsp olive oil
2 tsp salt
1 tsp paprika
1 avocado, cubed
200g cottage cheese
Hot honey* to drizzle
To garnish: fresh herbs such as coriander or dill.
Method
Toss the cubed sweet potatoes in a bowl with the 1/2 tbsp olive oil, salt and paprika. Air fry for 15 minutes (or roast in a pre-heated fan oven at 220ºC for 20 - 30 minutes).
Add 1/2 tbsp olive oil into a frying pan over a medium heat. Once the oil is hot, add the beef mince, breaking it apart with a spatula and cook for 5 minutes, stirring often. Once browned, add in the taco seasoning and stir to mix.
To serve, add the sweet potatoes and mince to a bowl with the cottage cheese and cubed avocado.
Garnish with any fresh herbs and drizzle over the hot honey.

Good to know:
Hot honey is honey that's been infused with chilli for a period of time. It's sweet with a slight spice, I buy this one online but it can also be found in supermarkets. You could also use regular honey with a pinch of chilli flakes (or no chilli if you don't like it spicy!)
If you don't like cottage cheese you could opt for sour cream or greek yogurt instead.
Store leftover cooked beef mince and roasted sweet potatoes in the fridge in an airtight container for up to 4 days.
