Peach, burrata and proscuitto on toast



Drizzled with honey and a sprinkle of fresh thyme (trust me) and sea salt, this is sweet, salty, crunchy, creamy, sticky and soft - and ready in less than 5 minutes!

Ingredients

4 slices of bread

2 ripe peaches

1 ball of burrata cheese (or use a few tbsps of ricotta)

4 strips of proscuitto

Fresh thyme

Sea salt

1 tbsp Honey



Method

  1. Toast your bread until golden.

  2. Use a sharp knife to slice your peaches in half, de-stone and finely slice.

  3. Tear your burrata ball and spread it over the toasted slices. Top with ribbons of torn prosciutto and the peach slices. Sprinkle over fresh thyme leaves, stripped from their stalks and finish with a pinch of salt and drizzle of honey

Good to know:

  • For a touch of heat, use a pinch of chill flakes - or use hot honey.

  • Use goats cheese, ricotta or mozzarella if you prefer.

  • Any stone fruits (in fact most fruits!) go with this combination; nectarines, plums, strawberries, blackberries etc.

  • Lemon thyme is also really nice here, instead of regular thyme.

  • Use parma ham or skip it out completely to make it veggie.
