
This incredible recipe is a guest recipe from the wonderful Florence from @tasting.thyme. Delicious chocolate orange brownie cookies are a real treat for any chocolate orange lovers and a great way to use any little oranges (satsumas etc) kicking about in your kitchen. Ingredients
65g unsalted butter
100g dark chocolate, chopped
65g granulated sugar
65g light brown sugar
1 medium egg
1 clementine/tangerine/satsuma: all the zest and half the juice
70g plain flour
1½ tbsp cocoa powder
1½ tsp baking powder
Pinch of salt
Method
Preheat the oven to 200C/180C Fan/Gas 6. Line 2 - 3 large baking trays with baking paper.
Add boiling water to a small saucepan on a medium heat. Place the butter and dark chocolate into a heatproof bowl and place on top of the pan of water (a Bain Marie/double boiler). Keep the heat low and stir until all melted. Take off the heat and set aside.
In a large bowl, or the bowl of a stand mixer, combine the egg and both sugars. Mix until pale and fluffy (3-5 minutes if using a stand mixer).
Add the orange zest and juice and chocolate/butter mixture and whisk until combined.
Use a rubber spatula or wooden spoon to gently fold in the flour, cocoa powder, baking powder and salt.
Use a tablespoon to scoop the batter onto trays. It’ll be fairly runny, like brownie batter. Space the cookies well apart as they will spread in the oven.
Bake for 10 - 12 minutes. Let them cool on a wire rack for a good 15+ mins before serving!

This recipe is easily doubled, I keep it small to suit my household but feel free to scale up
When heating the butter and chocolate together, take care to keep the heat low and keep an eye on it at all times
These keep about 3 days in an airtight container
