Total time to make : 30 minutes Time to prep : 15 minutes

Servings : 10

Ingredients

65g unsalted butter

100g dark chocolate, chopped

65g granulated sugar

65g light brown sugar

1 medium egg

1 clementine/tangerine/satsuma: all the zest and half the juice

70g plain flour

1½ tbsp cocoa powder

1½ tsp baking powder

Pinch of salt

Method

  1. Preheat the oven to 200C/180C Fan/Gas 6. Line 2 - 3 large baking trays with baking paper.

  2. Add boiling water to a small saucepan on a medium heat. Place the butter and dark chocolate into a heatproof bowl and place on top of the pan of water (a Bain Marie/double boiler). Keep the heat low and stir until all melted. Take off the heat and set aside.

  3. In a large bowl, or the bowl of a stand mixer, combine the egg and both sugars. Mix until pale and fluffy (3-5 minutes if using a stand mixer).

  4. Add the orange zest and juice and chocolate/butter mixture and whisk until combined.

  5. Use a rubber spatula or wooden spoon to gently fold in the flour, cocoa powder, baking powder and salt.

  6. Use a tablespoon to scoop the batter onto trays. It’ll be fairly runny, like brownie batter. Space the cookies well apart as they will spread in the oven.

  7. Bake for 10 - 12 minutes. Let them cool on a wire rack for a good 15+ mins before serving!

Good to know

  • This recipe is easily doubled, I keep it small to suit my household but feel free to scale up

  • When heating the butter and chocolate together, take care to keep the heat low and keep an eye on it at all times

  • These keep about 3 days in an airtight container
