Air fryer yogurt and berry toast



A sweet, custard like yogurt filling baked until caramelised with a creme brûlée flavour on a golden, crunchy brioche base topped with juicy berries. Ready in less than 10 minutes in the air fryer and with 15g of protein per serve, this will be your new favourite sweet breakfast. Don't have an air fryer? Ingredients


2 slices brioche bread

60g Greek yogurt

1 egg

1 tbsp honey

1/2 tsp vanilla extract

2 sliced strawberries

Handful of blueberries



Method


  1. Whisk the Greek yogurt, egg, honey and vanilla together with a fork in a small bowl until smooth.

  2. Use the back of a spoon to press into the middle of each brioche slice to create a ‘well’.

  3. Spoon in your custard mixture into the brioche 'well' and top with berries.

  4. Air-fry at 200°C for 6 minutes until golden and crisp.

  5. Top with icing sugar and a drizzle of honey to finish

Good to know:


  • Vegetarian.

  • To make this gluten-free, use gluten-free brioche or white bread.

  • Use any seasonal berries or fruits, just slice any big ones into bitesize pieces.

  • If you don't have an air-fryer you can bake these in a pre-heated fan oven at 180ºC for 10 - 12 minutes.
