The best avocado on toast



a strong claim but for me there are 3 elements to a great

avocado on toast; salty, creamy and spicy


Total time to make : 5 minutes Time to prep : 2 minutes

Ingredients


1 thick cut slice of sourdough

1/2 avocado

25g marinated goats cheese, I use Meredith Dairy

1/2 an avocado, sliced

1/2 inch red chilli, sliced finely - or pinch of dried chilli flakes

Salt, I used Maldon flaked sea salt

Dill, coriander to garnish

Squeeze of lemon to serve (essential)


 

Method


  1. Toast the sourdough until golden brown

  2. Spread the goats cheese on with a fork

  3. Fan out the sliced avocado and top with the chilli, salt and any garnishes

  4. Squeeze lemon over the entire slice before eating

Good to know:

  • For a lighter version, use marmite/vegemite under the avocado

  • Use good quality and fresh sourdough. I buy a loaf ready sliced from my favourite bakery and freeze the slices in portions to last throughout the week

  • Vegetarian
