Make ahead breakfast burritos

Golden sausages, fluffy scrambled eggs, melted cheese and sweet roasted peppers tightly wrapped in a soft tortilla. Colourful, simple and satisfying, batch make these burritos, wrap individually in foil and they freeze and reheat beautifully so you can save time and money without compromising on flavour.

Ingredients
4 medium flour tortillas
8 pork or chicken sausages
6 eggs
4 tbsp milk
1 tsp paprika
80g cheddar cheese, grated
4 jarred roasted red peppers, diced
Handful of fresh parsley, chopped
Olive oil spray
Salt and black pepper, to season
Method
Cook the sausages according to packet instructions (pan fry, in the air fryer or grill), until golden and cooked through. Then, cut them into bite sized pieces.
Meanwhile, whisk the eggs with the milk, paprika and a pinch of salt and pepper. Cook gently in a frying pan over a medium heat, stirring until just set and fluffy. Remove from the heat and stir in the cheese, sliced sausages, diced peppers and parsley.
Lay out the tortillas and divide the filling between them. Roll up tightly, folding in the sides. Wrap individually in foil if you're making them ahead of time (see notes below on how to reheat) or to get a crispy, toasted wrap - spray the wrapped burrito lightly with oil and place seam-side down in a frying pan or air fryer basket. Cook for 4 minutes until crisp and golden.
Serve warm with salsa or guacamole.

Good to know:
Wrap cooled burritos tightly in foil and store in the fridge for up to 3 days or freezer for up to 3 months.
Reheat from the fridge: unwrap from the foil and air fryer at 180ºC for 4 minutes until hot and crisp, microwave for 2 minutes or in a non-stick pan over a high heat for 2 minutes on each side until toasted and crisp.
Reheat from frozen: air fry at 180ºC for 12 minutes, still wrapped in foil, until piping hot or in the oven at 180ºC for 25 minutes, still wrapped in foil.
Swap for veggie sausages to make it vegetarian.
