Mango salsa



Sweet meets spicy. A vibrant and fresh salsa with a kick of spice using sweet mangoes, sour lime, heat from the jalapeño and paprika and lots of texture and fibre. Load these up onto fish tacos, nachos or as a side with fish or chicken.

Ingredients


2 mango

1 red onion

1 jalapeño

1 lime

Handful coriander

Salt

Paprika



Method


  1. Slice the mango into cubes and place in a large bowl

  2. Finely dice the red onion and jalapeño, add to the bowl with the mango and use a spoon to mix everything together

  3. Finely chop a large handful of coriander (leaves and stalks) and add to the bowl with a generous pinch of salt, paprika and the juice from 1 lime. Mix everything together again, taste and adjust as necessary

  4. Leave to sit for 15 minutes before serving to let the flavours come together, see notes below for how to store

  5. Serve the fresh mango salsa with extra wedges of lime and a large pinch of paprika

  6. Serve with nachos, stuffed into pitta bread, to bulk out burgers, salads or to add a fresh mexican-twist to any dish

Good to know:


  • Store in an airtight container or serving bowl wrapped tightly (cling film/wax wrap)

  • Will keep for up to 3 days in the fridge

  • Serve with a slotted spoon to drain any excess liquid
