Strawberry & pistachio overnight oats

Juicy strawberries and pistachios paired together on my fail-safe base recipe for overnight oats. Simple and delicious and perfect for warmer weather, high in protein (20g+ without adding any extra protein powder) and easy to make just one or multiply for the week ahead.
Time to prepare: 10 minutes
Chill time: 3 hrs +
Serves: 4
Ingredients
160g whole rolled oats
4 tbsp chia seeds
2 tbsp maple syrup (or honey)
2 tsp vanilla extract
Pinch of salt
240g Greek yoghurt
640ml milk of choice (I’ve used whole milk)
4 scoops (120g) protein powder* (optional, see notes)
Toppings
300g strawberries, roughly chopped
4 tbsp pistachio (or any) nut butter
40g pistachios, roughly chopped
Method
Mix the oats, chia seeds and a pinch of salt in a mixing bowl. If you're adding protein powder*, add that in too.
Add the milk, Greek yoghurt, maple syrup and vanilla. Stir well to combine.
Seal and refrigerate overnight, or for at least 3 hours.
Once set, divide the overnight oats between 4 jars or containers (or simply take what you need each morning).
Top each serving with the chopped strawberries, 1 tbsp nut butter and 10g chopped pistachios. Enjoy straight away or store in the fridge for later.

Good to know:
I add a whey protein powder (this vanilla). You could use any flavour or a plant-based protein powder, just add an extra splash of milk as plant protein thickens more.
Fridge: Store in an airtight container(s) in the fridge for up to 5 days.
