Bircher Muesli

Think of Bircher muesli as overnight oats’ more elevated cousin. Rolled oats, freshly grated apple, yoghurt, dried fruit and seeds soften together overnight. The grated apple is key here, giving the Bircher its naturally sweet flavour and soft texture, while the lemon juice helps keep it tasting fresh and bright. Inspired by the M&S version, this takes just 5 minutes to prep, saves you money and creates much bigger portions.

Ingredients
160g rolled oats
240ml milk of choice (I use whole)
300g Greek yoghurt
2 apples, grated
Juice of ½ lemon
2 tbsp honey
½ tsp ground cinnamon
Pinch of salt
40g dried cranberries
40g sultanas
30g pumpkin seeds
Toppings: Greek yoghurt, extra seeds and a drizzle of maple syrup.
Method
Add the oats, milk, yoghurt, grated apple, lemon juice, honey, cinnamon and salt to a large mixing bowl. Add half the pumpkin seeds, cranberries and sultanas, then stir everything together until well combined.
Cover and refrigerate overnight (or for at least 4 hours). The bircher will thicken overnight for a soft and creamy consistency.
Once chilled, divide the Bircher Muesli evenly between four jars or containers. Top with the remaining pumpkin seeds, cranberries, sultanas and any extras you like to serve.

Good to know:
Pink Lady, Granny Smith, Braeburn or Jazz apples all work really well here. Choose a crisp, sweet-tart variety for the best flavour and texture. There’s no need to peel them before grating.
Fridge: Store in airtight containers for up to 4 days.
