Quick hack to ripen bananas

I love the slow process of watching bananas turn freckly and ripen in the fruit bowl before I use them in recipes like my favourite banana bread, but occasionally life gets in the way or an excuse to bake comes out of nowhere - which is where this hack comes in perfectly.

Time to bake : 20 - 30 minutes

Bananas


This only really works for bananas which have yellow-ed and are ripe enough to eat, it's not ideal for bananas which still have green on their skin and would be bitter to eat



Method

  1. Preheat a fan oven to 160ºC and line a baking tray with baking paper or tin foil. The bananas can 'leak' when they're being baked so this saves a lot of washing up.

  2. Bake the bananas for 20 - 30 minutes (depending on how ripe they are already, the more they need to ripen, the more time they'll take).

  3. Once ready, their skin will be black and they should be very soft to touch (see photos above).

  4. Remove from the oven and let them cool before squeezing them from their skins to use in any recipe that requires mashed, ripe bananas.
