Honey baked feta with figs & pistachios

Golden baked feta that's soft and creamy inside, topped with jammy roasted figs, toasted pistachios, honey and thyme. Sweet, salty, crunchy perfection that's so simple to make. Serve warm with toasted bread, crackers or as part of a cheese board.

Ingredients
1 block feta
6 ripe figs, sliced into quarters
30g pistachios, roughly chopped
2 tbsp olive oil
2 tbsp honey
A few sprigs of thyme, leaves stripped
Method
Pre-heat a fan oven to180°C.
Place the feta in a small baking dish, scatter over the sliced figs and chopped pistachios.
Drizzle with the olive oil and honey, sprinkle over the thyme and bake for 20 minutes, until the feta is golden, the figs are soft and the honey is bubbling.
Garnish with fresh black pepper and a drizzle of balsamic glaze or pinch of chilli flakes (optional) to serve.

Cook in the air fryer at 180ºC for 10 - 12 minutes.
