This is my favourite base recipe for vanilla cupcakes. Light, fluffy and golden with a smooth, even and flat surface for the perfect base to decorate. I fill these with jam so that when you bite into each cupcake you get a sweet and intense burst of flavour too.

* always eat buttercream at room temperature when it's buttery and soft, not straight from the fridge when it's cold and firm. If you're storing cupcakes or a buttercream cake in the fridge, remove it before serving about 30 minutes before.
