Lemon & coconut bliss balls

Bright, zesty and naturally sweetened with honey, these lemon bliss balls are the perfect no-bake snack to have on hand throughout the week. Made with a cashew and coconut base, a hit of fresh lemon juice and zest and nutrient-dense hemp seeds, they come together in minutes and keep well in the fridge or freezer for weeks.

Ingredients
100g unsalted cashews
50g desiccated coconut
2 tbsp honey
Juice from ½ lemon
Zest of 1 lemon
2 tbsp hemp seeds
1 tsp vanilla extract
3 tbsp extra desiccated coconut, to roll
Method
Add the cashews and desiccated coconut to a food processor and blitz until you get a fine, crumbly texture.
Add the honey, lemon juice, lemon zest and vanilla extract and blitz again until the mixture comes together into a sticky dough.
Pinch the mixture - it should hold its shape - if it feels too dry, add a tiny bit more lemon juice or honey.
Add the hemp seeds and pulse briefly to combine.
Scoop out tablespoon-sized portions and roll into balls between your palms. Finish by rolling each ball in extra desiccated coconut.
Serve straight away or store in the fridge or freezer for later.
