Event Details:

In this online event, we’ll be baking a delicious Mediterranean-inspired lemon, thyme, almond and honey cake with a lemon syrup glaze, served with a honey whipped Greek yoghurt.


A golden, sun-soaked cake that brings together the rustic charm of ground almonds and polenta with zesty lemon, fragrant thyme and extra virgin olive oil. Naturally sweetened with honey, it bakes into a tender, textured sponge that soaks up a glossy lemon syrup for extra moisture and zing. Finished with a dollop of lemon, honey, and thyme infused Greek yoghurt, this Mediterranean-inspired bake is both wholesome and luxurious. Each slice is bright, earthy and perfectly balanced between fragrant, tangy and sweet.


Even better, as it’s a dense and moist sponge, it keeps really well (up to 10 days) with the flavours continue to develop over time.


A unique and beautiful bake, I’ll show you how to create the cake batter and make the glossy lemon-infused syrup whilst it bakes, as well as whipping up the accompanying Greek yogurt to serve with tips and tricks on how to best decorate it - whether you leave it natural or used sliced or dehyrated lemon slices. You’ll also learn how to quickly and easily line a cake tin, plus how to store or freeze the bake so it tastes just as good as the day you made it, perfect for prepping ahead of time for future occasions over Summer.


Packed with tips and tricks that’ll take you beyond this one recipe, you’ll cook along with me in real time from your own kitchen, with access to an interactive chat box to ask questions throughout the event. This is beginner-friendly and suitable for all levels, we’ll move at a very chilled pace. You don’t need to turn your video on and you'll only ever hear me talking throughout the event, so it’s a safe space to get creative, have some fun and learn something new.
