Pesto, egg and mozzarella breakfast bagel

Ready in less than 10 minutes in the air fryer with a great balance of carbs, fats and 30g protein, this is perfect for a quick and easy breakfast, brunch or lunch that tastes delicious and has minimal ingredients and washing up.

Ingredients

1 bagel, sliced in half

2 tbsp pesto

2 eggs

30g mozzarella (or any) grated cheese

Pinch of chilli flakes

Salt and pepper

Basil leaves, to garnish

Method

  1. Line your air fryer drawer with baking paper. Spread 2 tbsp of pesto onto the base of the paper in rough circles, don't worry about keeping it neat.

  2. Press your bagel halves, sliced-side-down, on top of the pesto. Crack an egg into the hole of each bagel and then sprinkle over the grated cheese. Finish with black pepper, salt and a pinch of chilli flakes if using.

  3. Air fry for 6 minutes at 180ÂșC until golden.

  4. Sprinkle over fresh basil to finish.
