Both my fridge and my freezer will always have at least one sweet and one savoury variety of butter coins: throw-everything in recipes that are incredibly versatile and adaptable. They add so much flavour to simple dishes and also make great gifts for dinner parties, barbecues or any occasions where you need to bring something edible but aren't quite sure what. I use savoury coins on steamed, boiled or roasted veggies, baked potatoes, steak, salmon or to spread on toast under eggs and I use sweet coins on toast, warmed banana bread or tea-cakes, scones, pancakes, waffles, bagels or grilled fruit.
